Questions about cooking with saffron

Why store saffron as threads?

Keeping the threads dry, dark and airtight protects them during storage. Grind only the quantity you need just before preparation.

Which preparation method should I choose?

Use the warm method for warm dishes and drinks, and the ice method for cold desserts and drinks. Follow the quantities and specific directions in your chosen recipe.

How much saffron do I need?

Use the quantity specified in the recipe and scale it with the number of servings. Thread sizes vary, so a thread count is not an exact conversion to grams.

When should saffron go into the dish?

Usually towards the end of preparation. Baking is an exception: the saffron preparation is incorporated before the batter or dough goes into the oven.

Are preparation times exact?

No. Times are estimates and depend on equipment, ingredient size and the starting temperature. Follow doneness cues and any cooling, resting or freezing requirements.
