Tender fish fillet with saffron and colourful Mediterranean vegetables

Ingredients for fish with saffron and vegetables

  • 2 fish fillets, such as cod, pollock, sea bream or pike-perch, about 160–180 g each
  • 0.1 g saffron threads
  • 2 tablespoons warm water or warm milk
  • 1 courgette, thinly sliced
  • 1 red pepper, cut into strips
  • 1 small fennel bulb or carrot, thinly sliced
  • 2 tablespoons olive oil
  • 1 small shallot, finely chopped
  • Salt and freshly ground white pepper, to taste
  • A little water or mild vegetable stock, as needed
  • Optional: fresh parsley or thyme

Saffron flavours the small amount of liquid that brings the fish and vegetables together. Choose water for a dairy-free version.

Step-by-step method

  1. Infuse the saffron. Lightly crush the threads and steep in the warm water or milk for 10–15 minutes. Do not fry the dry threads directly in hot oil.
  2. Prepare the fish. Pat the fillets dry and season lightly with salt. Warm the olive oil in a large pan over medium heat.
  3. Briefly sear. Add the fish and cook until the outside takes on a little colour. Transfer to a plate; the fish will finish cooking later.
  4. Cook the vegetables. Gently soften the shallot, courgette, pepper and fennel or carrot in the same pan. Keep the vegetables tender but structured, rather than deeply browned.
  5. Add the infusion. Add a small splash of water or vegetable stock. Lower the heat and stir in the saffron infusion, including the threads.
  6. Finish gently. Return the fish and simmer gently with the vegetables until cooked through, opaque and easy to flake. Timing depends on the thickness of the fillets.
  7. Season and serve. Adjust salt and white pepper, then add the optional fresh herbs. Serve immediately.

Flavour and cooking tips

The finished dish should taste fresh and balanced: moist fish, lightly cooked vegetables and a warm saffron note. Serve on its own or with fluffy saffron rice.

  • Protect the aroma: add the infusion once the heat is gentle, rather than frying saffron with the fish.
  • Avoid dry fish: check the fillets as they cook and take the pan off the heat once they are done.
  • Keep seasoning balanced: strongly browned vegetables or heavy spices can mask the saffron.
  • Use a measured dose: 0.1 g is enough for two portions; more is not automatically better.

Frequently asked questions

Which fish works best?

Mild, firm fish such as cod, pike-perch or sea bream works well. Choose similar-sized fillets so they finish together.

How much saffron do I need?

Use 0.1 g saffron threads for two portions, infused before adding to the pan.

Can I prepare this dish ahead?

You can chop the vegetables in advance. Cook the fish just before serving for the best texture.
