Saffron cholesterol research has reached a new milestone.
A 2025 study published in the Journal of Ethnopharmacology has revealed that saffron — known as the world’s most valuable spice — can naturally reduce cholesterol and protect the liver.

The study focused on a key enzyme called PCSK9, which controls how the body manages LDL (“bad”) cholesterol. When PCSK9 levels are high, the body cannot clear LDL cholesterol efficiently. Saffron, however, was shown to inhibit PCSK9, allowing the liver to remove excess cholesterol from the blood.
