Geographic origin and words such as “premium” do not by themselves prove these characteristics.

ISO 3632, explained simply

The ISO 3632 series provides a common framework for dried saffron. ISO 3632-1:2025 covers specification; ISO 3632-2:2010 describes test methods. The specification applies to whole threads, cut threads and powder.

Read the detailed ISO 3632 guide to understand the standard and how to interpret a laboratory result.

Colour, bitterness and aroma

Crocins: colour strength

Crocins contribute to saffron’s golden-yellow colouring power in water and food. A stronger colouring measurement is useful information, but does not establish authenticity or overall quality on its own.

Picrocrocin: characteristic bitterness

Picrocrocin contributes to saffron’s bitter taste and is involved in the formation of aroma-related compounds. Its associated analytical indicator should not be described as a direct proof of purity or hand-harvesting.

Safranal: aroma

Safranal is an important volatile aroma compound. Drying and storage influence its formation and its balance with other compounds. A higher value is not automatically better in every context.

Measurement is not the same as a molecule count
Standardised UV/Vis measurements at 257, 330 and 440 nm provide conventional quality indicators. They are not selective measurements of the exact amount of a single compound; other substances can contribute to absorption.

What a regional comparison can show

Studies comparing samples from Herat and other producing regions can reveal differences in the samples tested. Such findings do not establish that every batch from one country is superior to every batch from another.

Comparisons should identify the study, harvest year, sample selection, methods and limitations. Claims about irrigation water, chemical residues or soil cleanliness require appropriate evidence rather than an assumption based on origin.

Recognising authentic saffron

Natural saffron threads are dried stigmas from Crocus sativus. Shape, aroma and gradual golden colour release provide useful observations. Home tests cannot certify botanical authenticity, geographic origin or an ISO category.

For professional or disputed cases, microscopy, chromatography, spectroscopy or DNA-based methods may complement standardised quality testing.

Preparation also affects how colour and aroma are perceived. See our saffron preparation guide.

Why processing and laboratory reports matter

Careful harvesting, sorting, controlled drying and protected storage help preserve quality. Hand work is valuable, but it does not automatically prove that a product is free from residues or contamination.

A report should identify the tested sample or batch, analysis date, laboratory, methods and results. Quality testing, residue testing and microbiological testing answer different questions; one report may not cover all of them.

Independent laboratory results, including those issued by Eurofins, must be read against their actual scope. They support conclusions about the sample described, rather than every past or future Saffrona batch.

Read the documented batch evidence
Our saffron laboratory reports guide explains the published quality results for batch L2025-01, the testing scope and the limits of the evidence.

Three Saffrona cuts

LAAL · Pure-Red Cut

Selected deep-red stigma sections, presented for a clear view of the red cut. Reliable quality communication explains what was tested, when it was tested and what the results can support.

A practical buying checklist

Can the seller identify the product’s origin and batch?

Does a laboratory report refer to that batch?

Are the methods, date and scope of analysis clear?

Are the threads stored in suitable, well-sealed packaging?

Are quality claims specific and supported?

Continue your discovery

Explore the Saffron Academy for research, origin stories and practical recipes.

Saffron Academy · Knowledge & discovery Understanding Saffron Quality Beyond colour and beautiful packaging: learn how standards, processing, provenance and laboratory evidence help you assess…

["post-2777","page","type-page","status-publish","hentry
["GET
